Ingredients:

4 1/2 cups chicken broth

1 1⁄2 tsp Saffron

4 tablespoons olive oil, divided

1 lb fresh medium shrimp, peeled and deveined, tail on

1 lb fresh medium to large scallops

1 lb fresh mussels (about 10-12), cleaned properly

2 links Spanish chorizo, thinly sliced

2 cups boneless chicken breast, cut into 1-inch pieces

Salt and black pepper to taste

1 cup onion, finely diced

1 1⁄2 tbsp. Minced garlic

3 cups long grain rice

1/4 cup fresh lemon juice

Paella yellow rice seasoning packet.

1 cup frozen peas


Instructions:


In a medium saucepan add the chicken broth and saffron.

Heat the saucepan over low to medium heat and bring to a low simmer.

Cook for 4-5 minutes then set to the side.

Rinse and pat dry the shrimp, mussels and scallops with a paper towel.

Set aside.

In a very large skillet, heat 2 tablespoons of olive oil over medium heat.

Add the diced chicken to the large skillet and cook until done, about 5-7 minutes.

Add Spanish sausage to the skillet with the chicken, sauté for 3 minutes.

Stir the chicken and sausage often.

Add the diced onion, and minced garlic to the meat mixture and cook for 5 minutes over low to medium heat.

Remove the meat mixture from the pan and set to the side.

Add long grain rice to the same saute pan and cook over medium to high heat for 2 minutes.

Make sure to stir the rice often.

Add the chicken and saffron broth, meat mixture, lemon juice, paella seasoning packet, and 2 tablespoons olive

oil.
