In today’s fast-paced world, finding time to cook a nutritious and delicious dinner can be a challenge. Between work, school, and other commitments, it can feel like there are not enough hours in the day. This is where sheet pan dinners come in – a simple and convenient solution for busy weeknights.

Sheet pan dinners have gained popularity in recent years due to their ease of preparation and minimal clean-up. As the name suggests, all you need is a single sheet pan to make an entire meal. No more juggling multiple pots and pans on the stove or timing dishes to cook at different temperatures in the oven.

What makes sheet pan dinners so convenient is that everything cooks together on one pan, resulting in less prep time and fewer dishes to wash. By layering ingredients on top of each other, they also infuse each other with flavor as they roast together in the oven.

Chicken fajitas are a tasty and easy weeknight dinner option that can be made in just 30 minutes. With the combination of tender chicken, flavorful veggies, and delicious seasonings, it's no wonder why this dish has become so popular. So next time you're craving Mexican food but don't want to spend hours in the kitchen, give this sheet pan chicken fajita recipe a try!

Prep time: 15 minutes

Cook time: 30-35 minutes

Servings: about 12 tortillas

Ingredients:

·       2.5 lbs chicken, diced

·       1 red bell pepper, sliced

·       1 yellow bell pepper, sliced

·       1 orange bell pepper, sliced

·       1 red onion, sliced

·       ½ tsp paprika

·       ½ tsp garlic powder

·       ½ tsp onion powder

·       ½ tsp Mexican chili powder

·       ½ tsp dried oregano

·       ½ tsp cumin

·       1 tsp salt, or to taste

·       1 tsp black pepper, or to taste

·       2 garlic cloves, minced

·       1 bunch cilantro, chopped

·       2 tbsp olive oil

·       2 tbsp sour cream, for topping

·       1 avocado, diced, for topping

·       1 cup mozzarella, shredded, for topping

·       1 lime, juiced, for topping

·       12 tortillas (e.g., flour tortillas)

Instructions:

·       Preheat the Oven: Preheat your oven to 375 degrees Fahrenheit (190°C) to ensure it's ready when your fajitas are prepared.

·       Prepare the Chicken and Veggies: In a large mixing bowl, add the diced chicken, olive oil,  paprika, garlic powder, onion powder, Mexican chili powder, dried oregano, cumin, salt, and black pepper to the bowl. Mix until well combined. Then add the minced garlic, sliced red, yellow, and orange bell peppers, and sliced red onion. Mix everything together until the chicken and veggies are evenly coated with the spices and oil.

·       Arrange on a Sheet Pan: Prepare a sheet pan by lining it with parchment paper or lightly greasing it. Spread the seasoned chicken and veggies evenly across the sheet pan, ensuring they are in a single layer. This will help them cook evenly.

·       Bake the Fajitas: Place the sheet pan in the preheated oven and bake for 30-35 minutes or until the chicken is fully cooked and starts to develop a delicious brown color. Make sure to check the chicken for doneness, as cooking times may vary slightly depending on your oven.

·       Assemble Your Fajitas: Once your chicken fajitas are cooked to perfection, it's time to assemble your meal. Warm your tortillas according to package instructions or personal preference.

·       Toppings and Serving: Place a generous portion of the cooked chicken and veggie mixture onto each tortilla. Squeeze fresh lime juice over the filling, add diced avocado, a dollop of sour cream, a sprinkle of shredded mozzarella, and a garnish of chopped cilantro.

When it comes to serving up a delicious and well-rounded meal, the key is in the side dishes and accompaniments. While the sheet pan chicken fajitas recipe is a complete meal on its own, adding some carefully selected sides can elevate the dish and take it to the next level.

One of the most popular and classic options to pair with chicken fajitas is rice. The simplicity of steamed white or brown rice perfectly complements the flavorful chicken and vegetables in this dish. Another option is to make a cilantro lime rice to add an extra burst of flavor. You can also experiment with different types of rice such as jasmine or basmati for some added variety.

For a lighter option, you can serve your fajitas with a fresh green salad. A mix of crisp lettuce, tomatoes, onions, and avocado tossed in a simple vinaigrette dressing makes for a refreshing addition to your meal. You can also top it off with some shredded cheese or crunchy tortilla strips for added texture.

If you want something more substantial, consider making some homemade guacamole or salsa to accompany your fajitas. These dips not only add flavor but also provide some healthy fats and nutrients from avocados and tomatoes. Plus, they are easy to whip up while your fajitas are cooking in the oven.

Another delicious side dish that goes well with chicken fajitas is roasted vegetables. Simply toss some bell peppers, onions, zucchini, and mushrooms in olive oil and spices before roasting them alongside your chicken on the sheet pan. This adds another layer of flavor and texture to your meal while also sneaking in some extra veggies.

For those who love carbs, warm tortillas are always a favorite side dish for any Mexican-inspired meal. Soften them up by warming them on either a skillet or directly over an open flame for that authentic touch. And if you have any leftovers from your fajitas, you can use the tortillas to make delicious leftovers wraps for a quick and easy lunch the next day.

There is no shortage of side dishes and accompaniments to pair with your sheet pan chicken fajitas. From rice and salads to dips and roasted vegetables, these options add variety, flavor, and nutrition to your meal. So go ahead and experiment with different combinations to find your favorite pairing!
