Get ready to indulge in a slice of heaven with our mouthwatering Hummingbird Bundt Cake recipe! This delectable dessert is sure to delight your taste buds with its perfect balance of sweet pineapple, bananas, and pecans all topped off with a luscious cream cheese frosting.

The Hummingbird Cake is a delectable dessert that originated in the southern region of the United States. It is a moist and flavorful cake made with bananas, pineapple, and pecans, topped with a rich cream cheese frosting. This cake has gained popularity over the years due to its unique combination of ingredients and its delicious taste.

The history of the Hummingbird Cake can be traced back to the late 1960s when it first appeared in an issue of Southern Living magazine. However, its exact origin is still debated among bakers and food historians. Some believe that it was created by L.H. Wiggins, a chef at the now-closed Jamaica Inn restaurant in North Carolina. Others claim that it was created by Mrs. L.H. Wiggin's daughter, who submitted the recipe to Southern Living magazine.

Regardless of its origins, the Hummingbird Cake quickly became a beloved dessert in southern households and soon spread across the country as more people discovered its irresistible flavors. The cake earned its name from its light texture and sweetness, which were said to attract hummingbirds just like nectar does.

Instructions  for Hummingbird Bundt Cake Recipe

  1. Set your oven to 350F (175C) and generously grease a 8’’-10’’ Bundt pan with cooking spray.

  1. In a separate bowl, combine the flour, cinnamon, baking soda, salt, and allspice, then set it aside.

  1. Add the softened butter to a bowl with the brown sugar and granulated sugar. Whisk well until smooth and creamy.

  1. Mash the bananas, crush the pineapple, then mix with creamed sugar, coconut, eggs, and vanilla. Beat the mixture on medium-high speed until all the ingredients are well combined.

  1. Gradually fold in the flour mixture until it is just combined.

  1. Pour the batter into the prepared Bundt pan, ensuring that it is 2/3 to 3/4 full.

  1. Bake the cake for approximately 1 hour, starting to check the cake after 50 minutes, as it may be done in under an hour. To test for doneness, insert a long skewer (or toothpick) into the cake. If it comes out mostly clean, the cake is ready.

  1. After baking, allow the cake to cool in the pan for 10 minutes before turning it out onto a rack to cool completely.

  1. Add the softened cream cheese to a mixing bowl and add the powdered sugar gradually until desired thickness is achieved.

  1. You can spoon the frosting to the cake or you can add it to a piping bag with a large hole cut for thicker frosting. Slowly add the frosting to the crown of the cake allowing for a variety of drips to form.

  1. Top the frosting with the chopped pecans.

  1. Enjoy!
