Copycat California Pizza Kitchen Thai Chicken Pizza

Cook Time: 15-20 minutes

Servings: 6-8


For the Thai Peanut Sauce:

⅓ C. Peanut butter

⅓ C. Hoisin sauce

1 Tbsp. Honey

2 tsp. Garlic chili sauce

1 tsp. Sesame oil

3 tsp. Soy sauce

3 Tbsp. Chicken broth

2 tsp. Minced garlic

3 tsp. Ginger paste

For the pizza:

1 Store bought prepared pizza crust

1 ½ C. Mozzarella cheese shredded

¼ C. Bean sprouts

¼ C. Matchstick carrots

¼ C. Green onions chopped

2 Tbsp. Chopped cilantro or parsley

½ lb. Boneless skinless chicken breast cut into cubes

2 Tbsp. Olive oil


  1. Place the sauce ingredients into a pot over medium heat, and bring to a boil. Stir until heated through and slightly thickened.

  2. Remove from the heat and let cool.

  3. Marinate the chicken for 20 minutes in ⅓ cup of the sauce mixture.

  4. Heat the oil in a skillet over medium high heat.

  5. Sear the chicken until cooked through.

  6. Preheat the oven to 450 degrees.

  7. Spread the remaining sauce over the pizza crust, and top with 1 cup of the mozzarella cheese.

  8. Sprinkle the chicken over the crust.

  9. Add the bean sprouts, green onions and matchstick carrots.

  10. Layer the remaining cheese on top.

  11. Bake for 8-10 minutes.

  12. Garnish with cilantro or parsley before serving.
