Prepare the Ingredients:
Wash and prep the shrimp, fingerling potatoes, corn, and sausage. Slice the smoked sausage into your preferred thickness.
Layer Ingredients in the Instant Pot:
o Pour the chicken broth or water into the Instant Pot.
o Add the potatoes first to ensure they cook evenly.
o Place the corn on top of the potatoes.
o Add the sliced sausage over the corn.
o Sprinkle most of the Old Bay seasoning, garlic powder, salt, and black pepper over the ingredients, saving about 1/2 tbsp of Old Bay seasoning for the shrimp.
Pressure Cook (First Cycle):
Close the lid and set the valve to sealing. Cook on High Pressure for 5 minutes. Once the timer finishes, perform a quick release by carefully turning the valve to venting.
Add the Shrimp and Pressure Cook Again:
Open the lid and add the shrimp on top of the cooked ingredients. Sprinkle the reserved Old Bay seasoning over the shrimp. Close the lid again, set the valve to sealing, and cook on High Pressure for 1 minute. Perform a quick release once the timer finishes.
Finish with Lemon Juice and Serve:
Once everything is cooked, drizzle the juice of one lemon half over the shrimp boil for a fresh burst of flavor. Drain the liquid, or serve with some broth for dipping. Drizzle the melted butter over the shrimp boil. Garnish with extra Old Bay seasoning, parsley, and lemon wedges.
